About Icing

Decisions, decisions, decisions. With so many choices, deciding can be difficult. We can help you make the process a little easier. Here's a little information that may be helpful.

What is Buttercream Frosting? Fondant? Ganache?

Buttercream Frosting
Buttercream is a creamy frosting that is soft and smooth. It is used to ice cakes, as a filling, and to create decorative boders. This most popular wedding cake icing is made of butter, confectionery sugar, and milk.

Fondant
Fondant is a smooth and pliable icing that dries semi-hard. It is rolled out, then laid over the cake in uniform thickness. Fondant is sweeter than buttercream and can also be used for detail work such as intricate flowers.

Ganache
Ganache is a rich, silky chocolate mixture made by combining semi-sweet chocolate and boiling heavy cream and then stirring until smooth. Ganache can be flavored with fruit, spices and various liquors. It can be poured over cake or used as a filling in such desserts as truffles, depending on the proportion of chocolate to cream.
